Healthy Salmon Cakes with Greek salad

Healthy Salmon Cakes

Ingredients

  • 7.5 oz can Salmon
  • Extra Virgin Olive Oil
  • Sea Salt
  • diced celery (2 stalks)
  • diced carrot (1 carrot)
  • 1/2 jalapeno
  • 1tsp old bay seasoning
  • 1/2 tsp cumin
  • 1/2 tsp cayenne pepper
  • 2 slices plain bread toasted then crumbled
  • 1 egg, lightly beaten

Directions

Saute carrots celery and diced jalapenoon medium low heat in about a tbsp of extra virgin Olive oil for 5 minutes. Season with salt and pepper
Place the canned salmon in a bowl with crumbled bread and mix. Season with salt, pepper, cumin, old bay and cayenne pepper, mix. Added cooled sauteed vegetables. Add egg and mix. Form into 6 small patties and sautee in same pan as veggies with another tbsp oil on medium heat until golden on both sides about 2 minutes on each side.
Easy Greek Salad
Ingredients
  • halved grape tomatoes

  • crumbled feta cheese

  • carrot ribbons (carrot + peeler= carrot ribbons)

  • baby mixed greens

  • greek dressing


  • Directions
    Mix and serve alongside salmon cakes :)

    Thanks for the invite to link up! I have had "nightmares" about salmon cakes for years because of a really bad recipe that I was required to eat (once a week) in the 5th grade cafeteria. But, looking at the ingredients of your recipe, I think I could try it again!! :) Thanks for the hope. :)

    Bizzy B.- I love Ina Garden's recipe for salmon cakes but hers is much more expensive- i.e. fresh salmon, peppers, and capers. Also using the oven is a drain on electricity. I always try to use what I have and I have a ton of carrots and canned salmon :) This recipe should help you save money.     Salmon cakes with a crispy coating of breadcrumbs is a favorite family. Canned pink salmon is ideal for salmon cakes because it is cheap and it tastes good.
