Cuban-Style Picadillo

It's the New Year and we all want to eat healthier, at first glance this recipe doesn't seem healthy but I think it is :)

Cuban-Style Picadillo

Ingredients

- 1 lb 90% lean ground beef
- 3 tbsp extra-virgin olive oil
- 1 medium yellow onion
- 1/4 diced red or green pepper (fresh or frozen)
- 2 garlic cloves smashed
- 2 bay leaves
- 1 cup frozen peas (please don't use canned)
- 1 can Muir Glen Organic Chipotle Duced tomatoes 14.5 ounce (if you can't find this then just regular diced tomatoes)
- 1/4 cup raisins or currents
- 1/4 cup sliced pimento stuffed green olives (optional)
- 1 splash or vinegar
- 1/2 tsp cayenne pepper
-1/2 tsp taco seasoning or chilli powder
- 1/2 tsp cumin
- 1 pinch cinnamon (optional)
- 1 pinch old bay seasoning (optional)
- 1 pinch crushed red pepper flakes (optional)

Preparation

Heat oil in large pot over medium-high heat. Add onion, garlic, and bay leaves; sauté until onion is soft, about 5 minutes. Add beef; sauté until cooked, breaking up with back of fork, about 7 minutes. Add all remaining ingredients. Simmer until picadillo thickens, stirring occasionally, about 8 minutes. Season to taste with salt and pepper. Discard bay leaves. Serve picadillo warm over plain white rice :)
